Teriyaki Bok Choy

As I was in the grocery store yesterday,  I came across some stir fry kits in the veggie section. As I read the nutritional labels, I was surprised to see that the kits contained low sugar, low calorie ingredients, and they were loaded with veggies! So I picked up two different types (Teriyaki Bok Choy & Lemon Garlic Spinach). These were both my lunch and dinner for today. Because I had already cooked smoked chicken breast earlier in the week, I was able to quickly chop a 4 oz piece of chicken and add it to the stir fry mix. I cooked the stir fry in 1 tablespoon of grapeseed oil. Although the instructions recommended 1.5 tablespoons, one tablespoon was plenty. These meals took me approximately 5 minutes to prepare and they were very tasty. You just can’t get any easier than that! Highly recommend.  👍
